I love cucumbers but I don’t eat them enough. So I found some new recipes to add in my rotation. All of these are healthy, refreshing, and easy to make! Enjoy, Angel.

Quinoa and Cucumber Noodles

2 cups cucumber, spiralized or julienned
2 cups chopped tomatoes
2 large avocados, diced
1 red onion, sliced
2 cups cooked quinoa
1 handful chopped parsley (or cilantro)

For the dressing:

1 ripe avocado
1/4 cup white wine vinegar
Juice of one lime
Salt and fresh cracked pepper, to taste
3/4 cup olive oil

*The original recipe says this is 4-6 servings but the way I eat, it might be 3. Also, I’m not going to use raw onions.

Cucumber Lime Mocktail

1 large cucumber

1 cup of water
2 limes
3 tbsp mint leaves
2 tbsp maple syrup
pinch of salt
1 cup carbonated mineral water
2 cups of ice cubes

I’m excited about this beverage. There are many ways to make it your own. I like the idea of using watermelon juice instead of maple syrup.

Cucumber Tuna Salad Bites

  • 5 oz can chunk light tuna in water, drained well
  • 2 tsp minced red onion, soaked in cold water for 5 minutes, then drained and rinsed
  • 1 Tbsp minced celery
  • 1 Tbsp minced dill
  • 1/4 C mayo
  • 1/2 tsp fresh lemon juice
  • 1/8 tsp black pepper
  • 2 cucumbers with slices down the sides
  • 3 grape tomatoes sliced into quarters

If you don’t like tuna, use something else because the presentation of this dish is a winner.
